SAFE HANDLING INSTRUCTIONS
- All items should be kept tightly wrapped and refrigerated or frozen until ready to use.
- Hot foods should be kept hot. Consume hot food immediately or discard within 2 hours.
- Reheat hot food items to internal temperature of 165℉.
- Promptly refrigerate any leftovers.
REHEAT INSTRUCTIONS BY ITEM TYPE
Whole Smoked Turkey
In order to retain moisture, keep sealed in original protective wrap until ready to reheat.
Your smoked turkey is fully cooked and can be served chilled or at room temperature. If you prefer a hot bird pre-heat oven to 275º, place turkey in oven for 45 minutes to an hour, or to an internal temp of 165ºF. Remember to keep the turkey tightly sealed to avoid drying it out. For best results when re-heating, place turkey breast-side down, add butter or chicken broth to the bottom of the pan prior to re-heating. Do not overheat. Your poultry may have a dark exterior with a pink cast when sliced. This is an expected characteristic of a smoked poultry. For best results turkeys should be allowed to rest 20-30 minutes prior to carving.
Directions for whole smoked chicken are the same, adjust cooking time to 30 - 45 minutes.
Whole Beef Brisket
Preheat oven to 250º. Loosely wrap brisket in aluminum foil. (If you received your brisket from us, wrapped in plastic and foil, you may leave the oven-safe plastic on as long as it remains covered by foil during cooking). Add 1/3 cup of water or beef broth before sealing. Place wrapped brisket (fat-side up, if you have an unsliced, whole brisket) in a shallow baking pan. Heat for 30 - 60 minutes (larger briskets will take more time to come up to temperature), until internal temperature reads 165º.
If unsliced, allow brisket to rest for 15 minutes before slicing. Slice brisket diagonally, against the grain. Brisket retains more moisture if it is not sliced before reheating.
Whole Double Smoked Ham
Preheat oven to 350º, heat for 30 - 60 minutes, depending on size of ham. Heat glaze on stove top until it turns to liquid.
Coat Ham with glaze and return to oven for 5 minutes., or under broiler until the glaze bubbles and turns sticky.
Smoked St. Louis Pork Ribs
Preheat oven to 275º. Loosely wrap ribs in aluminum foil. (If you received your ribs from us, wrapped in plastic and foil, you may leave the oven-safe plastic on as long as it remains covered by foil during cooking). Place wrapped ribs in a shallow baking pan. Heat for 30 - 45 minutes, until internal temperature reads 165º.
Smoked Steak
Assuming your steak is just out of the fridge, use a bit of oil or butter, and place the meat, unsliced, in a pan over medium heat. For optimal food safety, reheat meat to an internal temperature of 165º.
Meats purchased by the pound
Pulled Pork, Pulled Chicken
Preheat oven to 275º. Loosely wrap in aluminum foil. If desired, add a small amount of water or stock to keep meat moist. Place wrapped meat in a shallow baking pan. Heat for up to 30 minutes, until internal temperature reads 165º. Please check your items periodically, to ensure they are not overcooked. If desired, add sauce during the final 10 minutes of cooking.
Ribbies
Preheat oven to 350º. Loosely wrap in aluminum foil. Place wrapped meat in a shallow baking pan. Heat for up to 30 minutes, until internal temperature reads 165º. Please check your items periodically, to ensure they are not overcooked.
Sliced Brisket, Sliced Prime Rib
Preheat oven to 275º. Loosely wrap in aluminum foil. Place wrapped meat in a shallow baking pan. Heat for up to 30 minutes, until internal temperature reads 165º. Please check your items periodically, to ensure they are not overcooked.
(For medium rare prime rib, set the temperature to 140°.)
Seafood
Seafood can overcook quickly, so we recommend reheating seafood in an aluminum foil pouch, low and slow just until heated through.
Impossible Meatloaf
Preheat oven to 350º. Cook covered for 20 - 30 minutes or up to 45 minutes for 1/3 pan or until internal temp of 160º.
Side Dishes
Preheat oven to 350º. Cook covered for 30 - 40 minutes or up to 1 hour for full pan. Reheat to 160º. Side dishes are typically covered with oven safe plastic wrap and a foil lid. Plastic does not need to be removed as long as foil is covering it during the reheating process. Keeping the plastic intact helps retain moisture during heating.
